Ingredients:
- 1 ½ cups (360 ml) Wheat Bran
- 1 cup (240 ml) Milk (any kind, dairy or non-dairy)
- 1 ½ cups (192 g) All-Purpose Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- ½ teaspoon Salt
- ½ teaspoon Ground Cinnamon
- ¼ teaspoon Ground Nutmeg (optional)
- ½ cup (113 g) Unsalted Butter, melted
- ½ cup (100 g) Brown Sugar, packed
- ¼ cup (50 g) Granulated Sugar
- 2 Large Eggs
- ¼ cup (60 ml) Molasses
- ½ cup (120 ml) Applesauce (unsweetened)
Instructions:
- Combine bran and milk in a large bowl. Let stand for at least 10 minutes (or up to an hour) to soften.
- Preheat oven to 400°F (200°C). Line a muffin tin with paper liners or grease well.
- In a separate bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg (if using).
- In another bowl, whisk together the melted butter, brown sugar, granulated sugar, eggs, molasses, and applesauce until well combined.
- Add the wet ingredients mixture to the soaked bran and mix until just combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix!
- Fill each muffin cup about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
