Ingredients:

  • 1 ½ cups (360 ml) Wheat Bran
  • 1 cup (240 ml) Milk (any kind, dairy or non-dairy)
  • 1 ½ cups (192 g) All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • ½ teaspoon Salt
  • ½ teaspoon Ground Cinnamon
  • ¼ teaspoon Ground Nutmeg (optional)
  • ½ cup (113 g) Unsalted Butter, melted
  • ½ cup (100 g) Brown Sugar, packed
  • ¼ cup (50 g) Granulated Sugar
  • 2 Large Eggs
  • ¼ cup (60 ml) Molasses
  • ½ cup (120 ml) Applesauce (unsweetened)

Instructions:

  1. Combine bran and milk in a large bowl. Let stand for at least 10 minutes (or up to an hour) to soften.
  2. Preheat oven to 400°F (200°C). Line a muffin tin with paper liners or grease well.
  3. In a separate bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg (if using).
  4. In another bowl, whisk together the melted butter, brown sugar, granulated sugar, eggs, molasses, and applesauce until well combined.
  5. Add the wet ingredients mixture to the soaked bran and mix until just combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix!
  7. Fill each muffin cup about 2/3 full.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
