Instructions:

  1. In a large bowl, combine the flour, yeast, sugar, and salt.
  2. Mix in the warm tomato juice and olive oil until a shaggy dough forms. Knead until smooth and elastic.
  3. Place the dough in a lightly oiled bowl, cover, and let rise until doubled in size.
  4. Punch down the dough and divide it into four equal portions. Shape each portion into a smooth round bun.
  5. Place the buns on a baking sheet lined with parchment paper, cover, and let rise again.
  6. Brush the buns with egg wash, sprinkle with seeds (if using), and bake until golden brown.
  7. Gently combine the ground beef, onion, garlic, Worcestershire sauce, smoked paprika, salt, and pepper in a bowl.
  8. Divide the mixture into four equal portions and shape each into a patty.
  9. Heat the oil in a griddle pan or frying pan. Cook the patties until browned and cooked through. Add cheese in the last minute.
  10. Slice the tomato buns in half. Spread with your favorite sauce. Layer with lettuce, tomato, red onion, gherkins, burger patty, and top bun. Serve immediately.
