Ingredients:

  • 1 can (20 ounces) sliced pineapple, drained
  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup whole milk
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan over medium heat, melt the 1/4 cup butter. Add the brown sugar and stir until dissolved. Pour the mixture into the cake pan and arrange the pineapple slices on top.
  3. In a mixing bowl, cream together the softened butter and granulated sugar until fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients and milk to the butter mixture, mixing until just combined.
  5. Carefully pour the cake batter over the pineapple layer in the pan. Bake for 35 minutes or until a toothpick comes out clean.
  6. Allow the cake to cool for 10 minutes in the pan. Invert onto a serving plate. Serve warm or at room temperature.
