Ingredients:
- 1 can (20 ounces) sliced pineapple, drained
- 1/2 cup brown sugar, packed
- 1/4 cup unsalted butter
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup whole milk
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 1/2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions:
- Preheat your oven to 350°F (175°C).
- In a saucepan over medium heat, melt the 1/4 cup butter. Add the brown sugar and stir until dissolved. Pour the mixture into the cake pan and arrange the pineapple slices on top.
- In a mixing bowl, cream together the softened butter and granulated sugar until fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients and milk to the butter mixture, mixing until just combined.
- Carefully pour the cake batter over the pineapple layer in the pan. Bake for 35 minutes or until a toothpick comes out clean.
- Allow the cake to cool for 10 minutes in the pan. Invert onto a serving plate. Serve warm or at room temperature.
