Ingredients:
- 1 lb lean ground turkey
- 1 tbsp olive oil
- 1 tbsp taco seasoning
- 1/4 tsp garlic powder
- 8 oz low-fat cream cheese, softened
- 2 cups shredded sharp cheddar cheese
- 1 can (14.5 oz) Rotel diced tomatoes and green chilies, undrained
- 2 tbsp fresh cilantro, chopped
- 1/4 tsp cumin
Instructions:
- Heat the olive oil in a skillet over medium-high heat. Add the ground turkey, breaking it apart with a spatula, and cook until browned and no longer pink.
- Stir in the taco seasoning and garlic powder until the meat is savory and aromatic.
- Reduce heat to low. Add the softened cream cheese to the center of the pan and stir constantly until melted and smooth.
- Fold in the shredded cheddar cheese, stirring gently until fully melted and glossy.
- Pour in the undrained Rotel tomatoes. Stir for 2–3 minutes until heated through and thickened.
- Fold in the fresh cilantro and cumin just before removing from heat.
