Ingredients:

  • 1 lb lean ground turkey
  • 1 tbsp olive oil
  • 1 tbsp taco seasoning
  • 1/4 tsp garlic powder
  • 8 oz low-fat cream cheese, softened
  • 2 cups shredded sharp cheddar cheese
  • 1 can (14.5 oz) Rotel diced tomatoes and green chilies, undrained
  • 2 tbsp fresh cilantro, chopped
  • 1/4 tsp cumin

Instructions:

  1. Heat the olive oil in a skillet over medium-high heat. Add the ground turkey, breaking it apart with a spatula, and cook until browned and no longer pink.
  2. Stir in the taco seasoning and garlic powder until the meat is savory and aromatic.
  3. Reduce heat to low. Add the softened cream cheese to the center of the pan and stir constantly until melted and smooth.
  4. Fold in the shredded cheddar cheese, stirring gently until fully melted and glossy.
  5. Pour in the undrained Rotel tomatoes. Stir for 2–3 minutes until heated through and thickened.
  6. Fold in the fresh cilantro and cumin just before removing from heat.
