Ingredients:

  • 1 large, ripe banana (approx. 120g / 4 oz), peeled
  • 2 large eggs (approx. 100g / 3.5 oz)

Instructions:

  1. In a mixing bowl, mash the banana thoroughly with a fork or potato masher until almost smooth. A few small lumps are fine.
  2. Crack the eggs into the bowl with the mashed banana.
  3. Whisk the banana and eggs together until well combined and relatively smooth. Don't overmix.
  4. Heat a non-stick frying pan or griddle over medium heat. You shouldn't need any oil, but a light spray of non-stick cooking spray can help ensure they don't stick.
  5. Pour approximately 2-3 tablespoons of batter onto the hot pan for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through. The pancakes will be delicate, so flip carefully.
  7. Serve immediately and enjoy!
