Ingredients:
- 1 large, ripe banana (approx. 120g / 4 oz), peeled
- 2 large eggs (approx. 100g / 3.5 oz)
Instructions:
- In a mixing bowl, mash the banana thoroughly with a fork or potato masher until almost smooth. A few small lumps are fine.
- Crack the eggs into the bowl with the mashed banana.
- Whisk the banana and eggs together until well combined and relatively smooth. Don't overmix.
- Heat a non-stick frying pan or griddle over medium heat. You shouldn't need any oil, but a light spray of non-stick cooking spray can help ensure they don't stick.
- Pour approximately 2-3 tablespoons of batter onto the hot pan for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through. The pancakes will be delicate, so flip carefully.
- Serve immediately and enjoy!
