Ingredients:

  • 2 thick slices Sourdough Bread (approx. 1 inch thick)
  • 1 teaspoon Extra Virgin Olive Oil (for brushing)
  • 1 large or 2 small Ripe Avocados (approx. 250g)
  • 1 tablespoon Freshly Squeezed Lime or Lemon Juice
  • 1/4 teaspoon Flaky Sea Salt (e.g., Maldon), or to taste
  • Pinch of Freshly Ground Black Pepper
  • Pinch of Red Pepper Flakes (or to taste)
  • 1 teaspoon Everything Bagel Seasoning (Optional)
  • 1 teaspoon Freshly Chopped Cilantro or Chives

Instructions:

  1. Brush one side of each bread slice lightly with olive oil. Toast in a toaster, under a grill (broiler), or in a dry skillet over medium heat until deeply golden brown and crisp on both sides.
  2. Halve the avocados, remove the stones, and scoop the flesh into a small bowl.
  3. Add the lime/lemon juice, flaky salt, and pepper to the avocado. Using a fork, roughly smash the mixture. Aim for texture—do not blend it completely smooth.
  4. Divide the avocado smash evenly between the two prepared slices of toast, spreading right to the edges.
  5. Garnish generously with red pepper flakes, the Everything Bagel Seasoning (if using), and the chopped fresh herbs.
  6. Serve immediately while the toast is still warm and crunchy.
