Ingredients:
- 2 cups (300g) mixed fresh berries (blueberries, raspberries, strawberries, chopped)
- 1/4 cup (50g) granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup (125g) all-purpose flour
- 1/2 cup (100g) rolled oats
- 1/2 cup (100g) brown sugar, packed
- 1/2 cup (115g) unsalted butter, cold and cubed
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
Instructions:
- Rinse the berries and pat dry. In a mixing bowl, combine mixed berries, sugar, lemon juice, cornstarch, and vanilla extract. Toss gently to coat. Let it rest for 10 minutes while preparing the crumble topping.
- In another bowl, mix flour, rolled oats, brown sugar, salt, and cinnamon (if using). Add cubed cold butter. Using your fingers or a pastry cutter, mix until it resembles coarse crumbs.
- Preheat the oven to 350°F (175°C). Pour the berry mixture into the prepared baking dish. Evenly sprinkle the crumble topping over the berries.
- Place in the preheated oven and bake for 25-30 minutes or until the topping is golden brown and the berries are bubbling.
- Remove from oven and let it cool for about 10 minutes before serving. Enjoy warm, ideally with a scoop of vanilla ice cream.
