Ingredients:

  • 2 cups (300g) mixed fresh berries (blueberries, raspberries, strawberries, chopped)
  • 1/4 cup (50g) granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1/2 cup (100g) rolled oats
  • 1/2 cup (100g) brown sugar, packed
  • 1/2 cup (115g) unsalted butter, cold and cubed
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)

Instructions:

  1. Rinse the berries and pat dry. In a mixing bowl, combine mixed berries, sugar, lemon juice, cornstarch, and vanilla extract. Toss gently to coat. Let it rest for 10 minutes while preparing the crumble topping.
  2. In another bowl, mix flour, rolled oats, brown sugar, salt, and cinnamon (if using). Add cubed cold butter. Using your fingers or a pastry cutter, mix until it resembles coarse crumbs.
  3. Preheat the oven to 350°F (175°C). Pour the berry mixture into the prepared baking dish. Evenly sprinkle the crumble topping over the berries.
  4. Place in the preheated oven and bake for 25-30 minutes or until the topping is golden brown and the berries are bubbling.
  5. Remove from oven and let it cool for about 10 minutes before serving. Enjoy warm, ideally with a scoop of vanilla ice cream.
