Ingredients:

  • 6 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 1 tablespoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • 1 (14 oz.) loaf brioche bread, cut into thick slices
  • 1/4 cup granulated sugar (for caramelizing)

Instructions:

  1. Whisk together eggs, milk, cream, sugar, vanilla extract, cinnamon, and salt in a large mixing bowl until fully combined.
  2. Arrange the brioche slices in a single layer in the baking dish. Pour the custard mixture over the bread, ensuring each slice is well soaked.
  3. Cover the baking dish with plastic wrap or aluminum foil and refrigerate overnight to allow the bread to absorb the custard.
  4. Preheat the oven to 350°F (175°C). Remove the cover and bake for 30-35 minutes, until the top is slightly golden and the custard is set.
  5. Allow the French toast to cool slightly. Sprinkle an even layer of granulated sugar on top and use a kitchen torch to caramelize the sugar until it forms a glossy, hardened crust.
  6. Slice and serve warm, garnished with fresh fruit or whipped cream if desired.
