Ingredients:

  • 4 cups Low-Sodium Chicken or Vegetable Stock
  • 1 tablespoon Fresh Ginger, finely grated
  • 1 clove Garlic, crushed
  • 2 tablespoons Low-Sodium Soy Sauce or Tamari (for Gluten-Free)
  • Fine Sea Salt, to taste
  • 1/4 teaspoon White Pepper, freshly ground
  • 2 tablespoons Cornflour (Corn Starch)
  • 3 tablespoons Cold Water
  • 3 Large Eggs, lightly beaten
  • 1 teaspoon Toasted Sesame Oil
  • 2 stalks Spring Onions (Scallions), thinly sliced
  • 1 tablespoon Fresh Coriander (Cilantro), optional

Instructions:

  1. Prepare the Aromatic Broth: In a medium saucepan, combine the stock, grated ginger, and crushed garlic. Bring the mixture to a low simmer over medium heat and allow it to simmer gently for 5 minutes to infuse the stock with the aromatics.
  2. Strain and Season: For a clear broth, strain the stock through a fine-mesh sieve into a clean pot, discarding the ginger and garlic solids. Return the strained stock to a gentle simmer. Stir in the soy sauce or Tamari and white pepper. Taste and adjust salt if necessary.
  3. Thicken the Broth (The Slurry): Whisk together the cornflour (corn starch) and cold water in a small bowl until absolutely smooth. Increase the heat under the broth to a gentle, rolling boil. While stirring the broth constantly, slowly pour the cornflour slurry into the centre. Continue to stir gently for 30–60 seconds until the soup thickens noticeably. Reduce the heat immediately to a very low simmer.
  4. Create the Silken Egg Ribbons: Whisk the three large eggs with a pinch of salt until slightly frothy. Ensure the soup is at a very gentle simmer. Start stirring the soup in a slow, continuous circle in the centre of the pot using a whisk. Slowly drizzle the beaten egg into the moving vortex of the soup. Once all the egg is poured in, stop stirring immediately and wait 30 seconds for the egg ribbons to fully set.
  5. Finish and Serve: Turn off the heat. Stir in the toasted sesame oil. Ladle the soup into bowls. Garnish generously with sliced spring onions and fresh coriander (if using). Serve immediately.
