Ingredients:
- 4 oz London Dry Gin
- 2 oz 100% Pomegranate juice (unsweetened)
- 1.5 oz Freshly squeezed lemon juice
- 1.5 oz Honey-Rose Syrup (1:1 honey and water infused with 1/4 tsp rose water)
- 1 Large egg white
- 3 oz Chilled sparkling water
- 2 Dried organic rose buds
- 1 tbsp Fresh pomegranate seeds
Instructions:
- Fill two coupe or Nick & Nora glasses with ice and water to chill, or place them in the freezer for 10 minutes.
- Perform the Dry Shake: Combine the gin, pomegranate juice, lemon juice, honey-rose syrup, and egg white in a Boston shaker. Shake vigorously without ice for 30 seconds to emulsify the proteins.
- Perform the Wet Shake: Add a generous amount of large ice cubes to the shaker. Shake again for 15–20 seconds until the shaker is frost-bitten.
- Double-strain the mixture through a Hawthorne strainer and a fine-mesh sieve into the chilled glasses to ensure a silky texture.
- Slowly pour the sparkling water into the center of the drink to lift the foam head.
- Garnish with a dried rose bud and a few fresh pomegranate seeds.
