Ingredients:

  • 1 lb fresh strawberries
  • 1 cup high-quality dark chocolate chips (70% cacao)
  • 1 tsp virgin coconut oil
  • 2 tbsp finely crushed pistachios
  • 1 tbsp hemp hearts
  • 1 tsp freeze-dried raspberry dust

Instructions:

  1. Wash the 1 lb of strawberries and dry them thoroughly with a paper towel.
  2. Combine dark chocolate chips and coconut oil in a microwave-safe glass bowl.
  3. Microwave in 20 second bursts, stirring vigorously between each. Cook until just a few small lumps remain, then stir until the residual heat melts them completely.
  4. Place the crushed pistachios, hemp hearts, and raspberry dust in separate small shallow bowls.
  5. Hold a strawberry by the green stem and submerge it into the chocolate. Twist gently as you lift it out to let the excess drip off.
  6. Immediately dip the tip or sides into your chosen topping while the chocolate is still wet.
  7. Place the berry on a sheet of parchment paper and let them sit until the surface looks matte and firm.
  8. Flash set. Place the tray in the refrigerator for 5 minutes until the shell feels cold and hard.
  9. Let them sit at room temperature for 10 minutes before serving to let the flavors 'bloom.'
