Ingredients:
- 4 cups (approx. 600g) seedless watermelon, cubed into 1-inch pieces
- 4 ounces (115g) feta cheese, crumbled or cubed into 1-inch pieces
- 1/4 cup (approx. 10g) fresh mint leaves, roughly chopped
- Optional: 1 small red onion, thinly sliced for garnish
- 1 cup (240ml) balsamic vinegar
- 2 tablespoons honey or maple syrup (optional, for added sweetness)
- 12-16 wooden skewers or small serving plates
Instructions:
- Cut the watermelon and feta into bite-sized cubes, roughly the same size.
- Combine balsamic vinegar and honey (if using) in a small saucepan. Simmer over medium-low heat, stirring occasionally, until reduced by half and thickened to a syrup-like consistency. Let cool slightly.
- Thread a watermelon cube, feta cube, and mint leaf onto each skewer. Repeat for all skewers.
- Drizzle the balsamic glaze over the assembled Watermelon Salad Bites. Garnish with thinly sliced red onion, if desired.
- Serve the Watermelon & Feta Salad Bites immediately for optimal freshness and flavor.
