Ingredients:

  • 4 cups (approx. 600g) seedless watermelon, cubed into 1-inch pieces
  • 4 ounces (115g) feta cheese, crumbled or cubed into 1-inch pieces
  • 1/4 cup (approx. 10g) fresh mint leaves, roughly chopped
  • Optional: 1 small red onion, thinly sliced for garnish
  • 1 cup (240ml) balsamic vinegar
  • 2 tablespoons honey or maple syrup (optional, for added sweetness)
  • 12-16 wooden skewers or small serving plates

Instructions:

  1. Cut the watermelon and feta into bite-sized cubes, roughly the same size.
  2. Combine balsamic vinegar and honey (if using) in a small saucepan. Simmer over medium-low heat, stirring occasionally, until reduced by half and thickened to a syrup-like consistency. Let cool slightly.
  3. Thread a watermelon cube, feta cube, and mint leaf onto each skewer. Repeat for all skewers.
  4. Drizzle the balsamic glaze over the assembled Watermelon Salad Bites. Garnish with thinly sliced red onion, if desired.
  5. Serve the Watermelon & Feta Salad Bites immediately for optimal freshness and flavor.
