Ingredients:

  • 6 cups (approximately 900g) cubed watermelon, seedless preferred
  • 4 ounces (115g) feta cheese, crumbled
  • ½ cup (about 75g) thinly sliced red onion
  • ½ cup (about 15g) fresh mint leaves, roughly chopped
  • 3 tablespoons (45ml) fresh lime juice
  • 3 tablespoons (45ml) extra virgin olive oil
  • 1 teaspoon (5ml) honey (or maple syrup for a vegan option)
  • ¼ teaspoon (about 1g) black pepper, freshly ground
  • Pinch of salt, or to taste

Instructions:

  1. Cut the watermelon into bite-sized cubes.
  2. Crumble the feta cheese. Thinly slice the red onion. Chop the fresh mint.
  3. In a small bowl, whisk together the lime juice, olive oil, honey (or maple syrup), black pepper, and salt until well combined.
  4. In the large mixing bowl, gently combine the cubed watermelon, crumbled feta cheese, sliced red onion, and chopped mint.
  5. Pour the dressing over the salad and gently toss to coat.
  6. For best results, serve immediately. However, the salad can be chilled for up to 30 minutes before serving.
