Ingredients:
- 8 ounces (225g) Feta cheese, preferably Greek feta in brine, drained and crumbled
- 4 ounces (115g) Greek yogurt, plain, full-fat or 2%
- 2 tablespoons Extra virgin olive oil, plus more for drizzling
- 1 tablespoon Lemon juice, freshly squeezed
- 1 small clove Garlic, minced (about 1/2 teaspoon)
- 1/4 teaspoon Dried oregano
- Pinch Red pepper flakes (optional, for a little kick)
- Freshly ground black pepper to taste
- Optional Garnish: Fresh herbs (mint, dill, parsley), toasted pine nuts, a drizzle of honey
Instructions:
- In a food processor, combine the feta cheese, Greek yogurt, olive oil, lemon juice, garlic, oregano, and red pepper flakes (if using).
- Process until the mixture is very smooth and creamy. Scrape down the sides of the bowl as needed.
- Taste the dip and season with black pepper. Add salt only if needed, as feta is already salty.
- Transfer the dip to a serving bowl. Cover and chill for at least 15 minutes to allow the flavours to meld (optional).
- Before serving, drizzle with olive oil and garnish with fresh herbs, toasted pine nuts, or a drizzle of honey, if desired. Serve immediately.
