Ingredients:

  • 8 ounces (225g) Feta cheese, preferably Greek feta in brine, drained and crumbled
  • 4 ounces (115g) Greek yogurt, plain, full-fat or 2%
  • 2 tablespoons Extra virgin olive oil, plus more for drizzling
  • 1 tablespoon Lemon juice, freshly squeezed
  • 1 small clove Garlic, minced (about 1/2 teaspoon)
  • 1/4 teaspoon Dried oregano
  • Pinch Red pepper flakes (optional, for a little kick)
  • Freshly ground black pepper to taste
  • Optional Garnish: Fresh herbs (mint, dill, parsley), toasted pine nuts, a drizzle of honey

Instructions:

  1. In a food processor, combine the feta cheese, Greek yogurt, olive oil, lemon juice, garlic, oregano, and red pepper flakes (if using).
  2. Process until the mixture is very smooth and creamy. Scrape down the sides of the bowl as needed.
  3. Taste the dip and season with black pepper. Add salt only if needed, as feta is already salty.
  4. Transfer the dip to a serving bowl. Cover and chill for at least 15 minutes to allow the flavours to meld (optional).
  5. Before serving, drizzle with olive oil and garnish with fresh herbs, toasted pine nuts, or a drizzle of honey, if desired. Serve immediately.
