Ingredients:
- 8 oz cream cheese, softened
- 2 cups sharp white cheddar cheese, freshly shredded
- 1 can (10 oz) Rotel diced tomatoes and green chilies, undrained
- 1 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions:
- Place the softened cream cheese in a medium saucepan over low heat. Stir continuously with a silicone spatula until the cheese is smooth and beginning to melt.
- Add the shredded white cheddar one handful at a time, stirring constantly until each addition is completely melted before adding more.
- Stir in the undrained Rotel, garlic powder, salt, and pepper.
- Keep the heat on low for another 2–3 minutes, stirring occasionally, until the dip is heated through and fragrant.
