Ingredients:

  • 8 oz cream cheese, softened
  • 2 cups sharp white cheddar cheese, freshly shredded
  • 1 can (10 oz) Rotel diced tomatoes and green chilies, undrained
  • 1 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Place the softened cream cheese in a medium saucepan over low heat. Stir continuously with a silicone spatula until the cheese is smooth and beginning to melt.
  2. Add the shredded white cheddar one handful at a time, stirring constantly until each addition is completely melted before adding more.
  3. Stir in the undrained Rotel, garlic powder, salt, and pepper.
  4. Keep the heat on low for another 2–3 minutes, stirring occasionally, until the dip is heated through and fragrant.
