Ingredients:

  • 15 fresh mint leaves
  • 2 tbsp granulated sugar
  • 2 oz freshly squeezed lime juice
  • 4 oz white rum
  • 1/2 cup full-fat canned coconut milk, shaken
  • 2 oz coconut rum
  • 4 oz club soda
  • 1/4 cup fresh pomegranate arils
  • 2 sprigs fresh mint for garnish

Instructions:

  1. Place the mint leaves, sugar, and lime juice in a cocktail shaker. Use a wooden muddler to press down and twist the leaves gently until the room smells intensely of mint, being careful not to pulverize the leaves.
  2. Add the white rum, coconut rum, and coconut milk to the shaker. Fill the shaker halfway with ice. Cap and shake vigorously for 15–20 seconds until the liquid is emulsified and the shaker feels frosty.
  3. Fill two glasses with fresh ice and strain the coconut mixture evenly between them. Top with a splash of club soda. Drop in the pomegranate arils and garnish with a sprig of mint.
