Ingredients:

  • 1 1/2 cups (192g) whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon (12g) granulated sugar (optional)
  • 1 3/4 cups (414ml) milk (dairy or non-dairy)
  • 1/4 cup (60ml) vegetable oil or melted unsalted butter, cooled slightly
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your waffle iron according to the manufacturer's instructions.
  2. In a large mixing bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, and sugar (if using).
  3. In a separate medium bowl, whisk together the milk, oil or melted butter, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and gently whisk until just combined. Don’t overmix; a few lumps are fine.
  5. Pour the appropriate amount of batter (as per your waffle iron's instructions) onto the hot waffle iron. Cook until golden brown and crispy, usually 3-5 minutes per waffle.
  6. Remove the waffles from the iron and serve immediately with your favorite toppings. To keep waffles crisp while you cook the rest, place them on a wire rack in a preheated 200°F (95°C) oven.
