Ingredients:
- 1 1/2 cups (192g) whole wheat flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon (12g) granulated sugar (optional)
- 1 3/4 cups (414ml) milk (dairy or non-dairy)
- 1/4 cup (60ml) vegetable oil or melted unsalted butter, cooled slightly
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions:
- Preheat your waffle iron according to the manufacturer's instructions.
- In a large mixing bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, and sugar (if using).
- In a separate medium bowl, whisk together the milk, oil or melted butter, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and gently whisk until just combined. Don’t overmix; a few lumps are fine.
- Pour the appropriate amount of batter (as per your waffle iron's instructions) onto the hot waffle iron. Cook until golden brown and crispy, usually 3-5 minutes per waffle.
- Remove the waffles from the iron and serve immediately with your favorite toppings. To keep waffles crisp while you cook the rest, place them on a wire rack in a preheated 200°F (95°C) oven.
