Ingredients:
- 1 ½ cups (192g) whole wheat flour
- 1 tsp baking soda
- ½ tsp ground cinnamon
- ¼ tsp salt
- 3 ripe bananas, mashed (approximately 1 ½ cups mashed)
- ⅓ cup (80ml) maple syrup
- ¼ cup (60ml) unsweetened applesauce
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup (120ml) unsweetened almond milk (or other milk)
- ½ cup (85g) dark chocolate chips, chopped or mini chocolate chips
Instructions:
- Preheat oven to 375°F (190°C). Line muffin tin with liners or grease well.
- In a large bowl, whisk together whole wheat flour, baking soda, cinnamon, and salt.
- In a separate large bowl, mash bananas well. Add maple syrup, applesauce, eggs, vanilla extract, and almond milk. Whisk until combined.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix! A few lumps are okay.
- Gently fold in the dark chocolate chips.
- Fill each muffin liner about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
