Ingredients:

  • 1 ½ cups (192g) whole wheat flour
  • 1 tsp baking soda
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • 3 ripe bananas, mashed (approximately 1 ½ cups mashed)
  • ⅓ cup (80ml) maple syrup
  • ¼ cup (60ml) unsweetened applesauce
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup (120ml) unsweetened almond milk (or other milk)
  • ½ cup (85g) dark chocolate chips, chopped or mini chocolate chips

Instructions:

  1. Preheat oven to 375°F (190°C). Line muffin tin with liners or grease well.
  2. In a large bowl, whisk together whole wheat flour, baking soda, cinnamon, and salt.
  3. In a separate large bowl, mash bananas well. Add maple syrup, applesauce, eggs, vanilla extract, and almond milk. Whisk until combined.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix! A few lumps are okay.
  5. Gently fold in the dark chocolate chips.
  6. Fill each muffin liner about 2/3 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
