- 1 cup (120g) whole wheat flour
- 1 cup (100g) rolled oats
- 2 tablespoons (25g) brown sugar
- 1 tablespoon (15g) baking powder
- 1/2 teaspoon salt
- 1 cup (240ml) milk (or plant-based alternative)
- 2 large eggs
- 2 tablespoons (30ml) vegetable oil (or melted coconut oil)
- 1 teaspoon vanilla extract
- Fresh berries, sliced bananas, or chopped nuts (optional)
- Maple syrup or honey (optional)
Instructions:
- In a mixing bowl, combine whole wheat flour, rolled oats, brown sugar, baking powder, and salt. Whisk until well mixed.
- In a separate bowl, whisk together milk, eggs, vegetable oil, and vanilla extract.
- Pour the wet mixture into the bowl with the dry ingredients. Stir until just combined – do not overmix; it’s okay if there are a few lumps.
- Preheat a non-stick skillet or griddle over medium heat. Grease lightly with oil or butter.
- Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges appear set (about 2-3 minutes).
- Flip pancakes and cook until golden brown on the other side (another 2-3 minutes). Repeat with remaining batter.
- Stack pancakes on plates and serve warm with toppings of your choice.
