Ingredients:

  • 4 (6-ounce) mahi mahi fillets (about 170 grams each)
  • Salt and pepper, to taste
  • 1/2 cup (60g) panko breadcrumbs
  • 1/4 cup (15g) fresh parsley, chopped
  • 2 tablespoons (30ml) olive oil
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Line the baking sheet with parchment paper or lightly grease it.
  3. Season the mahi mahi fillets with salt and pepper on both sides.
  4. In a mixing bowl, combine panko breadcrumbs, parsley, olive oil, lemon zest, lemon juice, garlic powder, and oregano until well mixed.
  5. Evenly spread the lemon herb mixture over the top of each mahi mahi fillet.
  6. Place the fillets on the prepared baking sheet and bake for 20-25 minutes, or until the fish is opaque and flakes easily with a fork.
  7. Remove from the oven and let rest for a few minutes before serving.
