Ingredients:
- 4 (6-ounce) mahi mahi fillets (about 170 grams each)
- Salt and pepper, to taste
- 1/2 cup (60g) panko breadcrumbs
- 1/4 cup (15g) fresh parsley, chopped
- 2 tablespoons (30ml) olive oil
- Zest of 1 lemon
- Juice of 1 lemon
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
Instructions:
- Preheat the oven to 400°F (200°C).
- Line the baking sheet with parchment paper or lightly grease it.
- Season the mahi mahi fillets with salt and pepper on both sides.
- In a mixing bowl, combine panko breadcrumbs, parsley, olive oil, lemon zest, lemon juice, garlic powder, and oregano until well mixed.
- Evenly spread the lemon herb mixture over the top of each mahi mahi fillet.
- Place the fillets on the prepared baking sheet and bake for 20-25 minutes, or until the fish is opaque and flakes easily with a fork.
- Remove from the oven and let rest for a few minutes before serving.
