Ingredients:
- 1 can (15 oz / 425 g) black beans, drained and rinsed
- 1 cup (150 g) cherry tomatoes, halved
- 1/2 cup (80 g) red onion, finely chopped
- 1/2 cup (75 g) bell pepper (any color), diced
- 1/4 cup (60 ml) fresh cilantro, chopped
- 1 jalapeño, finely chopped
- 1/4 cup (60 ml) lime juice
- 1 tbsp (15 ml) olive oil
- 1 tsp (5 g) cumin
- Salt and pepper to taste
Instructions:
- Rinse and drain black beans. Halve cherry tomatoes, chop red onion, bell pepper, cilantro, and jalapeño.
- In a large bowl, combine black beans, tomatoes, red onion, bell pepper, cilantro, and jalapeño.
- Whisk together lime juice, olive oil, cumin, salt, and pepper in a small bowl to make the dressing.
- Pour the dressing over the bean mixture and stir gently to combine.
- Chill in the refrigerator for at least 30 minutes to allow flavors to meld.
