Ingredients:

  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • 1 cup (150 g) cherry tomatoes, halved
  • 1/2 cup (80 g) red onion, finely chopped
  • 1/2 cup (75 g) bell pepper (any color), diced
  • 1/4 cup (60 ml) fresh cilantro, chopped
  • 1 jalapeño, finely chopped
  • 1/4 cup (60 ml) lime juice
  • 1 tbsp (15 ml) olive oil
  • 1 tsp (5 g) cumin
  • Salt and pepper to taste

Instructions:

  1. Rinse and drain black beans. Halve cherry tomatoes, chop red onion, bell pepper, cilantro, and jalapeño.
  2. In a large bowl, combine black beans, tomatoes, red onion, bell pepper, cilantro, and jalapeño.
  3. Whisk together lime juice, olive oil, cumin, salt, and pepper in a small bowl to make the dressing.
  4. Pour the dressing over the bean mixture and stir gently to combine.
  5. Chill in the refrigerator for at least 30 minutes to allow flavors to meld.
