Ingredients:
- 1 lb ground beef
- 1/2 cup diced onion
- 1 pack taco seasoning mix
- 2 cups shredded cheddar cheese
- 1 can refried beans, warmed
- 1 cup prepared Minute Rice
- 1 can Mexican blend corn, drained
- 4-5 large flour tortillas
- 8 oz chunky salsa
Instructions:
- Preheat to 350°F (175°C) and grease the baking dish with cooking spray.
- In a large skillet, brown the ground beef over medium-high heat. Add diced onion and cook until translucent. Drain excess fat and stir in taco seasoning according to package directions.
- Place one tortilla in the bottom of the prepared baking dish. Spread 1/3 of the refried beans over the tortilla, followed by 1/3 of the meat mixture, and a sprinkle of cheddar cheese.
- Add another tortilla on top, then spread 1/2 cup of rice, half of the salsa, and half of the drained corn. Sprinkle with cheese.
- Repeat with another tortilla, the remaining beans, more ground beef mixture, and a layer of cheese.
- Top with the last tortilla and layer remaining refried beans, ground beef, remaining corn, remaining rice, salsa, and final cheese layer.
- Cover with aluminum foil and bake for about 40 minutes. Remove the foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
- Allow the casserole to sit for 5 minutes before cutting. Optionally top with garnishes like sour cream, diced onion, and shredded lettuce.
