Ingredients:

  • 1 lb ground beef
  • 1/2 cup diced onion
  • 1 pack taco seasoning mix
  • 2 cups shredded cheddar cheese
  • 1 can refried beans, warmed
  • 1 cup prepared Minute Rice
  • 1 can Mexican blend corn, drained
  • 4-5 large flour tortillas
  • 8 oz chunky salsa

Instructions:

  1. Preheat to 350°F (175°C) and grease the baking dish with cooking spray.
  2. In a large skillet, brown the ground beef over medium-high heat. Add diced onion and cook until translucent. Drain excess fat and stir in taco seasoning according to package directions.
  3. Place one tortilla in the bottom of the prepared baking dish. Spread 1/3 of the refried beans over the tortilla, followed by 1/3 of the meat mixture, and a sprinkle of cheddar cheese.
  4. Add another tortilla on top, then spread 1/2 cup of rice, half of the salsa, and half of the drained corn. Sprinkle with cheese.
  5. Repeat with another tortilla, the remaining beans, more ground beef mixture, and a layer of cheese.
  6. Top with the last tortilla and layer remaining refried beans, ground beef, remaining corn, remaining rice, salsa, and final cheese layer.
  7. Cover with aluminum foil and bake for about 40 minutes. Remove the foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
  8. Allow the casserole to sit for 5 minutes before cutting. Optionally top with garnishes like sour cream, diced onion, and shredded lettuce.
