Ingredients:
- 4 (6-ounce/170g) salmon fillets, skin on or off
- 1 tablespoon olive oil
- Salt and freshly ground black pepper to taste
- 1/4 cup (60ml) fresh cilantro leaves, roughly chopped
- 3 tablespoons (45ml) fresh lime juice (about 2 limes)
- 2 tablespoons (30ml) olive oil
- 2 cloves garlic, minced
- 1 jalapeño, seeded and finely minced (optional)
- 1/2 teaspoon ground cumin
- 1/4 teaspoon red pepper flakes (optional)
- Pinch of salt
- Pinch of ground black pepper
- Lime wedges
- Fresh cilantro leaves
Instructions:
- Preheat oven to 400°F (200°C). Pat salmon fillets dry with paper towels. Lightly brush with olive oil and season with salt and pepper.
- In a small bowl, whisk together cilantro, lime juice, olive oil, garlic, jalapeño (if using), cumin, red pepper flakes (if using), salt, and pepper.
- Place salmon fillets in a shallow dish or on a baking sheet lined with parchment paper. Pour the marinade over the salmon, ensuring it's evenly coated.
- Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
- Garnish with fresh cilantro leaves and lime wedges. Serve immediately.
