Ingredients:

  • 4 (6-ounce/170g) salmon fillets, skin on or off
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste
  • 1/4 cup (60ml) fresh cilantro leaves, roughly chopped
  • 3 tablespoons (45ml) fresh lime juice (about 2 limes)
  • 2 tablespoons (30ml) olive oil
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded and finely minced (optional)
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon red pepper flakes (optional)
  • Pinch of salt
  • Pinch of ground black pepper
  • Lime wedges
  • Fresh cilantro leaves

Instructions:

  1. Preheat oven to 400°F (200°C). Pat salmon fillets dry with paper towels. Lightly brush with olive oil and season with salt and pepper.
  2. In a small bowl, whisk together cilantro, lime juice, olive oil, garlic, jalapeño (if using), cumin, red pepper flakes (if using), salt, and pepper.
  3. Place salmon fillets in a shallow dish or on a baking sheet lined with parchment paper. Pour the marinade over the salmon, ensuring it's evenly coated.
  4. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
  5. Garnish with fresh cilantro leaves and lime wedges. Serve immediately.
