Ingredients:
- 8 oz cream cheese, softened
- 1 can (10 oz) diced tomatoes with green chilies, undrained
- 2 cups shredded sharp cheddar cheese
- 1/2 tsp garlic powder
- 1/4 tsp ground cumin
- 1/4 tsp smoked paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions:
- Combine the softened cream cheese and the undrained diced tomatoes with green chilies in a medium saucepan. Heat over medium-low, stirring constantly with a spatula until the cream cheese has completely melted into a smooth consistency.
- Stir in the garlic powder, cumin, smoked paprika, salt, and pepper. Continue to stir for 2 minutes to ensure the spices are fully integrated.
- Turn heat to low. Fold in the shredded cheese one handful at a time, stirring gently until the cheese is just melted and the dip looks glossy and cohesive. Remove from heat immediately.
