Ingredients:
- 4 medium baking apples (such as Honeycrisp, Fuji, or Gala), cored
- 1 cup mixed berries (fresh or frozen, such as blueberries, raspberries, and strawberries)
- 2 tablespoons rolled oats (not instant)
- 1 tablespoon chopped walnuts or pecans (optional, for added crunch)
- 1 tablespoon lemon juice
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon ground cinnamon
- Pinch of ground nutmeg (optional)
- 1/4 cup water or apple cider
Instructions:
- Preheat the oven to 375°F (190°C).
- Core the apples, leaving the bottom intact. Score the skin around the middle of each apple (this prevents bursting).
- In a small bowl, combine the berries, oats, nuts (if using), lemon juice, honey/maple syrup, cinnamon, and nutmeg (if using).
- Stuff each apple with the berry mixture, mounding it slightly.
- Place the filled apples in the baking dish. Pour water or apple cider into the bottom of the dish.
- Bake for 40-45 minutes, or until the apples are tender and the filling is bubbly. Check doneness by piercing an apple with a fork - it should be soft.
- Let the apples cool slightly before serving.
