Ingredients:

  • 4 medium baking apples (such as Honeycrisp, Fuji, or Gala), cored
  • 1 cup mixed berries (fresh or frozen, such as blueberries, raspberries, and strawberries)
  • 2 tablespoons rolled oats (not instant)
  • 1 tablespoon chopped walnuts or pecans (optional, for added crunch)
  • 1 tablespoon lemon juice
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon ground cinnamon
  • Pinch of ground nutmeg (optional)
  • 1/4 cup water or apple cider

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Core the apples, leaving the bottom intact. Score the skin around the middle of each apple (this prevents bursting).
  3. In a small bowl, combine the berries, oats, nuts (if using), lemon juice, honey/maple syrup, cinnamon, and nutmeg (if using).
  4. Stuff each apple with the berry mixture, mounding it slightly.
  5. Place the filled apples in the baking dish. Pour water or apple cider into the bottom of the dish.
  6. Bake for 40-45 minutes, or until the apples are tender and the filling is bubbly. Check doneness by piercing an apple with a fork - it should be soft.
  7. Let the apples cool slightly before serving.
