Ingredients:

  • 1 pound (450 g) ground beef or turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz.) black beans, rinsed and drained (425 g)
  • 1 cup (240 ml) salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 6-8 flour tortillas (8-inch diameter)
  • 2 cups (240 g) shredded cheddar cheese
  • 1 cup (240 ml) sour cream
  • Fresh cilantro for garnish (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, sauté the chopped onion until translucent.
  3. Add minced garlic and cook for another minute.
  4. Stir in ground beef and cook until browned. Drain excess fat.
  5. Add black beans, salsa, chili powder, cumin, salt, and pepper. Mix well and simmer for 5 minutes.
  6. Spread a thin layer of the beef mixture in the bottom of the baking dish.
  7. Layer 2 tortillas on top, then add half of the remaining beef mixture.
  8. Spread half of the sour cream on the beef.
  9. Sprinkle with 1 cup of cheese.
  10. Repeat layers: tortillas, beef, sour cream, then top with the remaining cheese.
  11. Bake in the preheated oven for 25-30 minutes until cheese is golden and bubbly.
  12. Let cool for 5-10 minutes before slicing. Garnish with cilantro if desired.
