Ingredients:
- 1 pound (450 g) ground beef or turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz.) black beans, rinsed and drained (425 g)
- 1 cup (240 ml) salsa
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 6-8 flour tortillas (8-inch diameter)
- 2 cups (240 g) shredded cheddar cheese
- 1 cup (240 ml) sour cream
- Fresh cilantro for garnish (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large skillet over medium heat, sauté the chopped onion until translucent.
- Add minced garlic and cook for another minute.
- Stir in ground beef and cook until browned. Drain excess fat.
- Add black beans, salsa, chili powder, cumin, salt, and pepper. Mix well and simmer for 5 minutes.
- Spread a thin layer of the beef mixture in the bottom of the baking dish.
- Layer 2 tortillas on top, then add half of the remaining beef mixture.
- Spread half of the sour cream on the beef.
- Sprinkle with 1 cup of cheese.
- Repeat layers: tortillas, beef, sour cream, then top with the remaining cheese.
- Bake in the preheated oven for 25-30 minutes until cheese is golden and bubbly.
- Let cool for 5-10 minutes before slicing. Garnish with cilantro if desired.
