Ingredients:
- 1 lb (450g) ground turkey (lean)
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper (any color), diced
- 1 zucchini, diced
- 1 cup (150g) cherry tomatoes, halved
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley or cilantro, for garnish (optional)
Instructions:
- In a large skillet, heat olive oil over medium-high heat.
- Add diced onion and garlic, sauté until translucent, about 3 minutes.
- Add ground turkey, breaking it up with a spatula; cook until browned, about 5 minutes.
- Stir in chili powder, cumin, salt, and pepper; cook for another minute to combine flavors.
- Add bell pepper, zucchini, and cherry tomatoes; mix and cook for 5-7 minutes until vegetables are tender.
- Taste and adjust seasoning if necessary.
- Remove from heat, garnish with parsley/cilantro, and serve.
