Ingredients:

  • 1 lb (450g) ground turkey (lean)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper (any color), diced
  • 1 zucchini, diced
  • 1 cup (150g) cherry tomatoes, halved
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley or cilantro, for garnish (optional)

Instructions:

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add diced onion and garlic, sauté until translucent, about 3 minutes.
  3. Add ground turkey, breaking it up with a spatula; cook until browned, about 5 minutes.
  4. Stir in chili powder, cumin, salt, and pepper; cook for another minute to combine flavors.
  5. Add bell pepper, zucchini, and cherry tomatoes; mix and cook for 5-7 minutes until vegetables are tender.
  6. Taste and adjust seasoning if necessary.
  7. Remove from heat, garnish with parsley/cilantro, and serve.
