Instructions:
- Open and thoroughly drain both cans of tuna. Transfer the tuna to the large mixing bowl. Use a fork to flake the tuna until it reaches a medium-fine consistency.
- Finely dice the celery stalks and mince the red onion. Chop the fresh dill and parsley.
- Add the cottage cheese, Dijon mustard, and fresh lemon juice to the flaked tuna in the bowl.
- Add the diced celery, minced red onion, chopped herbs, salt, pepper, and optional relish to the bowl.
- Using a rubber spatula, gently fold all the ingredients together until just combined. Be careful not to overmix.
- Taste a small amount. Adjust salt, pepper, or add a squeeze more lemon juice if needed.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavours to meld together. This chilling time is highly recommended.
- Serve the Cottage Cheese Tuna Salad chilled, piled high on lettuce cups, whole-grain bread, or with crudités.
