Ingredients:
- 2 tbsp (30ml) Extra virgin olive oil
- 1 lb (450g) Ground beef
- 1 medium (110g) Yellow onion, finely diced
- 2 large (60g) Carrots, finely minced
- 2 stalks (60g) Celery, finely minced
- 4 cloves (20g) Garlic, minced
- 28 oz (794g) Crushed San Marzano tomatoes
- 6 oz (170g) Tomato paste
- 1/2 cup (120ml) Dry red wine
- 1 tsp (5g) Dried oregano
- 1 tsp (5g) Granulated sugar
- 1 tsp (6g) Kosher salt
- 1/2 tsp (3g) Black pepper
- 1/4 cup (10g) Fresh basil, torn
- 2 tbsp (15g) Fresh parsley, chopped
- 1/4 cup (25g) Grated Parmesan cheese
Instructions:
- Preheat your oven to 300°F (150°C).
- Place the Dutch oven on the stovetop over medium-high heat and add the olive oil.
- Add the ground beef, breaking it apart with a spoon. Cook until the meat is deeply browned and the fat has rendered.
- Stir in the diced onion, carrots, and celery. Sauté for 5–7 minutes until the vegetables are translucent and the edges of the onion are golden.
- Add the minced garlic and tomato paste; stir constantly for 2 minutes until the paste turns a dark brick red.
- Pour in the red wine, scraping the bottom of the pot with your spoon to release all the browned bits (the fond). Let the wine reduce by half.
- Stir in the crushed tomatoes, dried oregano, sugar, salt, and pepper.
- Bring the sauce to a light simmer on the stove, then cover with the lid.
- Transfer the pot to the preheated oven. Let it braise undisturbed for 2.5 to 3 hours.
- Remove the pot from the oven and stir in the fresh basil, parsley, and grated Parmesan cheese before serving.
