Ingredients:
- 2 ¾ cups (340g) all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- ¾ cup (170g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 large egg whites or 4 tablespoons powdered egg whites
- 3 cups (360g) powdered sugar, sifted
- 1 tsp lemon juice (optional)
- Food coloring (various colors)
- Sprinkles, edible glitter, or any other fun toppings
Instructions:
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream butter and sugar until light and fluffy.
- Beat in the egg and vanilla.
- Gradually add dry ingredients to the wet mixture until combined.
- Chill the dough for at least 30 minutes.
- Preheat the oven to 350°F (175°C).
- Roll out the chilled dough on a floured surface to about ¼-inch thickness.
- Cut out shapes using cookie cutters and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until edges are lightly golden.
- Allow cookies to cool completely on a wire rack.
- In a mixing bowl, combine egg whites (or powdered egg whites) and powdered sugar.
- Mix until smooth and glossy; add lemon juice for better consistency if desired.
- Divide into smaller bowls and tint with food coloring.
- Fill piping bags or squeeze bottles with royal icing.
- Use different techniques to decorate: outlining, flooding, and adding sprinkles!
- Let the icing dry completely before storing.
