Ingredients:

  • 2 ¾ cups (340g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¾ cup (170g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 large egg whites or 4 tablespoons powdered egg whites
  • 3 cups (360g) powdered sugar, sifted
  • 1 tsp lemon juice (optional)
  • Food coloring (various colors)
  • Sprinkles, edible glitter, or any other fun toppings

Instructions:

  1. In a bowl, whisk together flour, baking powder, and salt.
  2. In a separate bowl, cream butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla.
  4. Gradually add dry ingredients to the wet mixture until combined.
  5. Chill the dough for at least 30 minutes.
  6. Preheat the oven to 350°F (175°C).
  7. Roll out the chilled dough on a floured surface to about ¼-inch thickness.
  8. Cut out shapes using cookie cutters and place them on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes or until edges are lightly golden.
  10. Allow cookies to cool completely on a wire rack.
  11. In a mixing bowl, combine egg whites (or powdered egg whites) and powdered sugar.
  12. Mix until smooth and glossy; add lemon juice for better consistency if desired.
  13. Divide into smaller bowls and tint with food coloring.
  14. Fill piping bags or squeeze bottles with royal icing.
  15. Use different techniques to decorate: outlining, flooding, and adding sprinkles!
  16. Let the icing dry completely before storing.
