Ingredients:

  • 6-8 medium ripe peaches, peeled and sliced (about 4 cups)
  • 1/4 cup granulated sugar (50g)
  • 2 tablespoons all-purpose flour (15g)
  • 1 tablespoon lemon juice (15ml)
  • 1/2 teaspoon ground cinnamon (2.5ml)
  • 1/4 teaspoon ground nutmeg (1.25ml)
  • 2 tablespoons unsalted butter, cut into small pieces (30g)
  • 1 cup all-purpose flour (120g)
  • 1 cup granulated sugar (200g)
  • 1 1/2 teaspoons baking powder (7.5ml)
  • 1/4 teaspoon salt (1.25ml)
  • 1 cup milk (240ml)
  • 1/2 cup (1 stick) unsalted butter, melted (113g)

Instructions:

  1. In a large bowl, gently combine the sliced peaches, sugar, flour, lemon juice, cinnamon, and nutmeg.
  2. Pour the peach mixture into the baking dish and dot with the butter pieces.
  3. In a separate bowl, whisk together the flour, sugar, baking powder, and salt.
  4. Stir in the milk until just combined. Do not overmix.
  5. Pour the batter evenly over the peach filling.
  6. Gently pour the melted butter over the topping.
  7. Bake in a preheated oven at 375°F (190°C) for 45-55 minutes, or until the topping is golden brown and the filling is bubbly.
  8. Let the cobbler cool slightly before serving.
