Ingredients:
- 2 ½ cups all-purpose flour
- 1 cup unsalted butter, chilled and cubed
- 1 tsp salt
- 1 tbsp granulated sugar
- 6-8 tbsp ice water
- 6-8 medium apples, peeled, cored, and sliced
- ¾ cup granulated sugar
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1 tbsp lemon juice
- 2 tbsp all-purpose flour
Instructions:
- In a bowl, combine flour, salt, and sugar.
- Cut in chilled butter until mixture resembles coarse crumbs.
- Stir in ice water, one tablespoon at a time, until dough comes together.
- Divide dough into two discs, wrap, and chill for 30 minutes.
- In a large bowl, toss sliced apples with sugar, cinnamon, nutmeg, lemon juice, and flour.
- Allow to sit for 15-20 minutes to release juices.
- Preheat the oven to 425°F (220°C).
- Roll out one disc of dough on a lightly floured surface to fit the pie dish.
- Place the rolled dough in the dish, fill with apple mixture.
- Roll out the second dough disc, cover the filling, and seal the edges.
- Cut slits for steam to escape; brush with egg wash.
- Bake in preheated oven for 15 minutes.
- Reduce temperature to 350°F (175°C) and continue baking for 30-35 minutes until crust is golden and filling is bubbly.
- Allow pie to cool for at least 2 hours before slicing.
- Serve with clotted cream or vanilla ice cream.
