Ingredients:

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter, chilled and cubed
  • 1 tsp salt
  • 1 tbsp granulated sugar
  • 6-8 tbsp ice water
  • 6-8 medium apples, peeled, cored, and sliced
  • ¾ cup granulated sugar
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tbsp lemon juice
  • 2 tbsp all-purpose flour

Instructions:

  1. In a bowl, combine flour, salt, and sugar.
  2. Cut in chilled butter until mixture resembles coarse crumbs.
  3. Stir in ice water, one tablespoon at a time, until dough comes together.
  4. Divide dough into two discs, wrap, and chill for 30 minutes.
  5. In a large bowl, toss sliced apples with sugar, cinnamon, nutmeg, lemon juice, and flour.
  6. Allow to sit for 15-20 minutes to release juices.
  7. Preheat the oven to 425°F (220°C).
  8. Roll out one disc of dough on a lightly floured surface to fit the pie dish.
  9. Place the rolled dough in the dish, fill with apple mixture.
  10. Roll out the second dough disc, cover the filling, and seal the edges.
  11. Cut slits for steam to escape; brush with egg wash.
  12. Bake in preheated oven for 15 minutes.
  13. Reduce temperature to 350°F (175°C) and continue baking for 30-35 minutes until crust is golden and filling is bubbly.
  14. Allow pie to cool for at least 2 hours before slicing.
  15. Serve with clotted cream or vanilla ice cream.
