Ingredients:
- 2 cups (60g) fresh basil leaves, packed
- 1/3 cup (45g) pine nuts, lightly toasted
- 3 cloves (9g) garlic, peeled
- 1/2 cup (120ml) olive oil
- 1/2 cup (50g) grated Parmesan cheese
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (2g) lemon zest
- 1/2 tsp (3g) sea salt
- 12 oz (340g) whole wheat linguine
- 2 tbsp (30ml) olive oil
- 3 cloves (9g) garlic, minced
- 1/2 cup (120ml) reserved pasta water
Instructions:
- Place basil, toasted pine nuts, garlic, lemon juice, zest, and salt into a food processor; pulse until coarsely chopped.
- While the food processor is running on low, slowly drizzle in the 1/2 cup of olive oil until the mixture is smooth and velvety.
- Stir in the grated Parmesan cheese by hand to maintain texture.
- Bring a large pot of salted water to a boil. Add whole wheat linguine and cook until al dente (1-2 minutes less than package directions).
- Before draining the pasta, reserve 1 cup of the starchy pasta water.
- Heat 2 tbsp olive oil in a large skillet over medium-low heat. Add minced garlic and sauté for 2 minutes until fragrant and translucent.
- Stir the prepared pesto and 1/2 cup of reserved pasta water into the skillet, whisking until a glossy emulsion forms.
- Add the cooked pasta to the skillet and toss with tongs until the noodles are thoroughly coated in the sauce.
