Ingredients:
- 1 large head of garlic
- 1 cup mayonnaise
- 2 tablespoons blue jam
- 1 tablespoon lemon juice
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Optional: diced herbs for garnish
Instructions:
- Preheat the oven to 400°F (200°C). Slice the top off the garlic head to expose the cloves. Drizzle with olive oil, wrap in foil, and roast for 30 minutes until soft.
- In a mixing bowl, combine mayonnaise, blue jam, lemon juice, and Dijon mustard. Mash in the roasted garlic cloves using a fork.
- Add salt and pepper to taste, whisking until smooth and creamy.
- If aioli is too thick, add a little water or more lemon juice to reach desired consistency.
- Allow the aioli to chill for at least 10 minutes in the refrigerator to meld flavors. Garnish with diced herbs if desired before serving.
