Ingredients:

  • 1 large head of garlic
  • 1 cup mayonnaise
  • 2 tablespoons blue jam
  • 1 tablespoon lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Optional: diced herbs for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C). Slice the top off the garlic head to expose the cloves. Drizzle with olive oil, wrap in foil, and roast for 30 minutes until soft.
  2. In a mixing bowl, combine mayonnaise, blue jam, lemon juice, and Dijon mustard. Mash in the roasted garlic cloves using a fork.
  3. Add salt and pepper to taste, whisking until smooth and creamy.
  4. If aioli is too thick, add a little water or more lemon juice to reach desired consistency.
  5. Allow the aioli to chill for at least 10 minutes in the refrigerator to meld flavors. Garnish with diced herbs if desired before serving.
