Ingredients:
- 4 fillets of flounder (about 6 oz each or 170g)
- 1 teaspoon salt (5g)
- ½ teaspoon black pepper (2g)
- 2 tablespoons all-purpose flour (15g)
- 2 tablespoons olive oil (30ml)
- 4 tablespoons unsalted butter (57g)
- 2 cloves garlic, minced
- 2 tablespoons fresh lemon juice (30ml)
- Zest of 1 lemon
- 1 tablespoon fresh parsley, chopped (optional)
Instructions:
- Pat the flounder fillets dry with paper towels. Season both sides with salt and pepper. Lightly dredge the fillets in flour, shaking off excess.
- Heat olive oil in a skillet over medium-high heat until shimmering. Place the fillets in the skillet, skin-side down, and cook for 3-4 minutes until golden brown. Flip the fillets and cook for an additional 2-3 minutes until cooked through (internal temperature should reach 145°F or 63°C).
- In the same skillet, reduce heat to medium. Add minced garlic and sauté for 1 minute until fragrant. Stir in butter, lemon juice, and zest until butter melts and sauce combines.
- Plate the fish and spoon lemon butter sauce over the top. Garnish with fresh parsley if desired.
