Ingredients:

  • 4 fillets of flounder (about 6 oz each or 170g)
  • 1 teaspoon salt (5g)
  • ½ teaspoon black pepper (2g)
  • 2 tablespoons all-purpose flour (15g)
  • 2 tablespoons olive oil (30ml)
  • 4 tablespoons unsalted butter (57g)
  • 2 cloves garlic, minced
  • 2 tablespoons fresh lemon juice (30ml)
  • Zest of 1 lemon
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions:

  1. Pat the flounder fillets dry with paper towels. Season both sides with salt and pepper. Lightly dredge the fillets in flour, shaking off excess.
  2. Heat olive oil in a skillet over medium-high heat until shimmering. Place the fillets in the skillet, skin-side down, and cook for 3-4 minutes until golden brown. Flip the fillets and cook for an additional 2-3 minutes until cooked through (internal temperature should reach 145°F or 63°C).
  3. In the same skillet, reduce heat to medium. Add minced garlic and sauté for 1 minute until fragrant. Stir in butter, lemon juice, and zest until butter melts and sauce combines.
  4. Plate the fish and spoon lemon butter sauce over the top. Garnish with fresh parsley if desired.
