Ingredients:
- 2 cups (250g) all-purpose flour, plus more for dusting
- 1 cup (200g) granulated sugar
- ½ teaspoon (2.5g) baking powder
- ¼ teaspoon (1.25g) salt
- 1 cup (226g) unsalted butter, very cold, cut into ½-inch cubes
- 1 large egg
- 4 cups (approx. 600g) fresh peaches, peeled and sliced (about 4-5 medium peaches)
- 1 tablespoon (15ml) lemon juice
- ½ cup (100g) packed light brown sugar
- ½ teaspoon (2.5g) ground cinnamon
- ¼ teaspoon (1.25g) ground nutmeg
- 2 teaspoons (6g) cornstarch (cornflour in the UK!)
Instructions:
- Preheat oven to 375°F (190°C). Grease and lightly flour (or line with parchment paper) a 9x13 inch baking pan.
- In a large bowl, whisk together flour, granulated sugar, baking powder, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Mix in the egg. Divide the mixture in half.
- Press half of the flour mixture evenly into the bottom of the prepared baking pan to form a firm crust.
- In a separate bowl, gently toss sliced peaches with lemon juice, brown sugar, cinnamon, nutmeg, and cornstarch.
- Spread the peach mixture evenly over the prepared crust. Crumble the remaining flour mixture evenly over the peaches to create the topping.
- Bake in the preheated oven for 45 minutes, or until the top is golden brown and the peach filling is bubbly.
- Let the bars cool completely in the pan before cutting into squares. This is crucial for them to set properly!
