Ingredients:

  • 4 cups powdered sugar
  • 3 large egg whites or 1/2 cup egg white powder
  • 1 tsp lemon juice or vinegar (optional)
  • 1 tsp pure vanilla extract (optional)

Instructions:

  1. Sift the powdered sugar into a clean mixing bowl to remove lumps.
  2. In a separate bowl, combine egg whites and lemon juice (or vinegar) and whisk until foamy.
  3. Gradually add the sifted powdered sugar to the egg whites and use an electric mixer on low speed to combine until smooth.
  4. Increase the mixer speed to medium-high and whisk until it reaches stiff peaks (3-5 minutes). Test consistency: for outlining, it should hold shape; for flooding, thin with water.
  5. Gently fold the icing with a spatula to remove any trapped air.
  6. Use immediately or store covered at room temperature to prevent drying out.
  7. Fill piping bags and decorate as desired.
