Ingredients:
- 4 cups powdered sugar
- 3 large egg whites or 1/2 cup egg white powder
- 1 tsp lemon juice or vinegar (optional)
- 1 tsp pure vanilla extract (optional)
Instructions:
- Sift the powdered sugar into a clean mixing bowl to remove lumps.
- In a separate bowl, combine egg whites and lemon juice (or vinegar) and whisk until foamy.
- Gradually add the sifted powdered sugar to the egg whites and use an electric mixer on low speed to combine until smooth.
- Increase the mixer speed to medium-high and whisk until it reaches stiff peaks (3-5 minutes). Test consistency: for outlining, it should hold shape; for flooding, thin with water.
- Gently fold the icing with a spatula to remove any trapped air.
- Use immediately or store covered at room temperature to prevent drying out.
- Fill piping bags and decorate as desired.
