Ingredients:
- 2 cups (370g) short-grain white rice
- 1.5 cups (350ml) water
- 0.25 cup (60ml) kimchi brine
- 1 tbsp (15ml) soy sauce
- 1 tbsp (15ml) toasted sesame oil
- 1 lb (450g) lean ground beef
- 1 cup (150g) aged kimchi, chopped
- 3 cloves (15g) garlic, minced
- 1 tsp (5g) fresh ginger, grated
- 1 tbsp (15g) Gochujang
- 4 large eggs
- 3 stalks (20g) green onions, sliced
- 1 tbsp (5g) toasted sesame seeds
- 1 tsp (5ml) toasted sesame oil
Instructions:
- If using a rice cooker with a sauté function, brown the beef in 1 tbsp of oil until deep brown. Otherwise, mix raw ground beef with minced garlic, grated ginger, and Gochujang in a bowl until incorporated.
- Rinse the rice until water runs clear and place it in the rice cooker pot. Stir in the water, kimchi brine, soy sauce, and sesame oil.
- Layer the chopped kimchi and the beef mixture evenly across the top of the rice without stirring them in.
- Close the lid and cook using the 'White Rice' or 'Standard' setting. Once finished, let the pot sit undisturbed for 5 minutes to steam.
- While the rice rests, fry the eggs in a separate pan sunny-side up or over-easy.
- Gently fold the beef and kimchi into the rice. Portion into bowls and top each with a fried egg, sesame seeds, and sliced green onions. Drizzle with remaining sesame oil.
