Ingredients:

  • 1 1/4 cups (150g) all-purpose flour, plus more for dusting
  • 1/2 teaspoon (2g) salt
  • 1/2 cup (113g) unsalted butter, very cold, cut into cubes
  • 1/4 cup (60ml) ice water
  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) packed light brown sugar
  • 1/2 cup (120ml) maple syrup (Grade A or B)
  • 1 teaspoon (5ml) vanilla extract
  • 1/4 teaspoon (1g) salt
  • 3 large eggs
  • 1 1/2 cups (150g) pecan halves, toasted

Instructions:

  1. Make the Pie Crust: Combine flour and salt. Cut in cold butter. Add ice water until dough comes together. Flatten into a disc, wrap, and chill.
  2. Preheat Oven & Prepare Pie Plate: Preheat oven to 350°F (175°C). Grease pie plate.
  3. Roll Out Dough: Roll out chilled dough on a lightly floured surface. Transfer to pie plate, trim edges, and crimp.
  4. Prepare Filling: Melt butter. Whisk in brown sugar, maple syrup, vanilla, and salt. Whisk in eggs until smooth.
  5. Assemble Pie: Arrange toasted pecans in the pie crust. Pour filling over pecans.
  6. Bake: Bake for 50-60 minutes, or until the filling is set around the edges but slightly jiggly in the center. A knife inserted near the center should come out mostly clean.
  7. Cool & Serve: Let cool completely on a wire rack before slicing and serving.
