Ingredients:
- 2 cups (250g) all-purpose flour
- 3 large (150g) eggs
- 1 cup (240ml) whole milk
- 1 tsp (6g) salt
- 1/4 tsp (0.5g) ground nutmeg
- 4 tbsp (56g) unsalted butter
- 2 tbsp (8g) fresh parsley
- Pinch of black pepper
Instructions:
- Whisk together the flour, salt, and nutmeg in a medium bowl until evenly distributed.
- In a separate bowl, beat the eggs and milk together until smooth.
- Slowly pour the wet mixture into the dry ingredients, whisking vigorously until the batter is smooth and resembles thick pancake batter.
- Let the batter sit at room temperature for 20 minutes to allow the gluten to relax.
- Bring a large pot of heavily salted water to a rolling boil.
- Hold the spaetzle maker over the steam for 60 seconds to warm the metal.
- Fill the press with batter and press firmly and steadily into the boiling water using a circular motion to avoid clumping.
- Once the noodles float to the surface (approximately 2-3 minutes), remove them using a slotted spoon.
- In a large non-stick skillet, melt the butter and sear the noodles until golden, finishing with chopped parsley and black pepper.
