- 1/2 cup (1 stick) unsalted butter (113g)
- 3 very ripe bananas, mashed (approx. 1 1/2 cups)
- 2 large eggs
- 1/2 cup granulated sugar (100g)
- 1/4 cup packed light brown sugar (50g)
- 1/4 cup sour cream
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour (210g)
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
Instructions:
- Melt butter in a saucepan over medium heat. Cook, swirling frequently, until it turns a nutty brown color and emits a fragrant aroma. Remove from heat and let cool slightly.
- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, whisk together the mashed bananas, eggs, granulated sugar, brown sugar, sour cream, vanilla extract, and browned butter.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
