  • 1/2 cup (1 stick) unsalted butter (113g)
  • 3 very ripe bananas, mashed (approx. 1 1/2 cups)
  • 2 large eggs
  • 1/2 cup granulated sugar (100g)
  • 1/4 cup packed light brown sugar (50g)
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour (210g)
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions:

  1. Melt butter in a saucepan over medium heat. Cook, swirling frequently, until it turns a nutty brown color and emits a fragrant aroma. Remove from heat and let cool slightly.
  2. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  3. In a large bowl, whisk together the mashed bananas, eggs, granulated sugar, brown sugar, sour cream, vanilla extract, and browned butter.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Pour the batter into the prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  7. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
