Ingredients:
- 1 1/2 cups (135g) rolled oats (old-fashioned, not instant)
- 1 cup (120g) all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup (120ml) unsweetened applesauce
- 1/4 cup (60ml) maple syrup (or honey)
- 1/4 cup (60ml) melted coconut oil (or melted unsalted butter, cooled)
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup (50g) chopped walnuts or pecans
- 1/2 cup (75g) raisins or dried cranberries
Instructions:
- Preheat oven to 350°F (175°C). Line baking sheet(s) with parchment paper.
- In a large bowl, whisk together oats, flour, baking soda, cinnamon, and salt.
- In a separate bowl, whisk together applesauce, maple syrup (or honey), melted coconut oil (or butter), egg, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir until just combined. Be careful not to overmix.
- Gently fold in chopped nuts and dried fruit.
- Drop rounded tablespoons of dough onto prepared baking sheet(s), leaving about 2 inches between cookies.
- Bake for 12-15 minutes, or until edges are golden brown and the centers are set.
- Let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
