Ingredients:

  • 1 1/2 cups (135g) rolled oats (old-fashioned, not instant)
  • 1 cup (120g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (120ml) unsweetened applesauce
  • 1/4 cup (60ml) maple syrup (or honey)
  • 1/4 cup (60ml) melted coconut oil (or melted unsalted butter, cooled)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup (50g) chopped walnuts or pecans
  • 1/2 cup (75g) raisins or dried cranberries

Instructions:

  1. Preheat oven to 350°F (175°C). Line baking sheet(s) with parchment paper.
  2. In a large bowl, whisk together oats, flour, baking soda, cinnamon, and salt.
  3. In a separate bowl, whisk together applesauce, maple syrup (or honey), melted coconut oil (or butter), egg, and vanilla extract.
  4. Pour wet ingredients into dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in chopped nuts and dried fruit.
  6. Drop rounded tablespoons of dough onto prepared baking sheet(s), leaving about 2 inches between cookies.
  7. Bake for 12-15 minutes, or until edges are golden brown and the centers are set.
  8. Let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
